- In another large skillet over medium-high heat, add the remaining two tablespoons of oil; add mushrooms, occasionally tossing until browned on all sides, about 5 minutes. Then add sweet potatoes for another 5 minutes until softened slightly but not cooked thoroughly, as they will continue cooking once we combine everything at the end!
