  • Heat one tablespoon of the oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until softened, about 5 minutes.
  • Mix quinoa, vegetable broth, and spices in a medium saucepan; boil over high heat; reduce heat to low and simmer covered until liquid is absorbed and quinoa is tender (about 15 minutes).
  • In another large skillet over medium-high heat, add the remaining two tablespoons of oil; add mushrooms, occasionally tossing until browned on all sides, about 5 minutes. Then add sweet potatoes for another 5 minutes until softened slightly but not cooked thoroughly, as they will continue cooking once we combine everything at the end!
